What speaks for preparing trout in the oven in aluminum foil
I love fish, what I don’t like is having the smell of fish all over the apartment. And what I like even less is cleaning the pan or casserole dish afterwards.
With a trout in the oven, which is prepared in aluminum foil, you save all that. The fish cooks in its own juice and becomes super tender. The foil ensures that the fish absorbs the spices evenly all around and that they do not burn in the casserole dish.
You don’t have to fillet the fish, just put it in the foil as a whole. Later, the meat can be easily detached from the bones.
You can season it with herb butter, herbs, garlic, lemon. Ready-made fish and spice mixtures are also suitable for the oven trout. Or you mix your own spice mixture. My favorite: chili, rosemary, garlic and salt, but more on that in a moment.

The optimal temperature at which the trout cooks in the oven is 200° top and bottom heat. If you have a convection function, you can also choose that. Set the oven to 180° in a convection oven.
The trout cooks in aluminum foil in the oven for 20 to 25 minutes before you can eat it. The optimal time to prepare the side dishes.
After the baking time, the meat can be easily removed from the bones. It is now white to pink and no longer glassy. If you are unsure whether the trout wrapped in aluminum foil has finished cooking, carefully cut it with a knife. If that still doesn’t bring the desired insight, it’s better to leave it in the oven for another 5 minutes.
By the way: The aluminum foil can be replaced with baking paper. In summer, the trout on the grill is very good. The taste really comes into its own on the charcoal grill. Here you do without the aluminum foil and pack the trout in fish tongs.
Incidentally, fish is not grilled directly on the charcoal, but indirectly, so that it becomes juicy and does not burn.

Here comes the longer version with a very precise step-by-step guide. The recipe is enough for two people.

- 2 ready-to-cook trout with approx. 250 grams per fish
- 2 cloves of garlic
- 1 chili pepper
- 1 bunch of dill
- 4 tbsp. olive oil
- 1 unwaxed lemon
- 1 teaspoon coarse sea salt and 1 teaspoon pepper
You can also use chili salt instead of the chili pepper, which simply reduces the amount of sea salt in the recipe. But I recommend fresh chilies because they are much more intense.
Also: a casserole dish, two pieces of aluminum foil.
1. Prepare the foil
Before you’re going to be full of abundance and fish, you should first prepare the foil.
Tear off two pieces from the roll. The foil should definitely be larger than the fish so that you can wrap it nicely.
Lay the foil on the countertop.
2. Prepare the fish
Take the fish out of the packaging.
Wash it off thoroughly under cold water, both externally and internally.
Pat it dry with kitchen paper.
You don’t have to cut the skin of the fish. Just leave her as she is.
Lay it on the foil and tuck it in loosely.
3. Prepare the filling
In the next step you have to prepare the filling for the trout in the oven in aluminum foil. Here you can vary with spices. If you’re not entirely happy with my recipe, you can find more filling inspiration a little further down.
Finely chop the garlic and chili peppers.
Always wear gloves when chopping chili, and don’t touch your face.
If you don’t like it that spicy, you can omit the chili or remove the seeds of the chili pepper, this is where most of the heat is hidden.
Cut up the dill.
Mix the garlic, chili, dill, and olive oil in a bowl.
4. Stuff the fish
Open the fish and fill it with the mixture. Apply a little olive oil to the skin of the fish.
Finally, salt and pepper the abdomen.
Cut the lemon into small pieces. You put half in the fish and the other half on top of the fish.
5. Off to the oven
Now close the aluminum foil and close the package until the fish is no longer visible.
Now put the trout in the oven at 180 degrees Celsius top and bottom heat.
During the baking time, the trout should remain in the aluminum foil nest.
After 25 minutes the fish is ready. If you want the trout to get some color, you can slightly open the foil in the last 5 minutes and switch to top heat.
It tastes best when you serve the trout fresh out of the oven. Place them on the plates with the foil and slowly work your way forward. Removing the foil beforehand does little except stain the table, your shirt, and maybe even the floor. 🙂
