Preparation:
- Heat the olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper. Place the roast in the skillet and cook for 3-4 minutes on each side, or until browned.
- Transfer the roast to the slow cooker. Add the onion, garlic, beef broth, tomato paste, Worcestershire sauce, mustard, rosemary, and thyme to the slow cooker. Cover and cook on low for 8-10 hours, or until the roast is tender and easily shreds with a fork.
- Remove the roast from the slow cooker and place it on a cutting board. Using two forks, shred the roast into small pieces. Return the shredded beef to the slow cooker and stir in any accumulated juices.
- To make the gravy, whisk together 2 tablespoons of cornstarch and 1/4 cup water in a small bowl. Pour the mixture into the slow cooker and stir to combine. Cover and cook on high for an additional 15-20 minutes, or until the gravy has thickened.
- Serve the roast beef with the gravy.
